Spicy chicken fry - quick N' easy

Ingredients:
Chicken drumsticks/thigh pieces- 8 nos. skinned
Chicken masala - 11/2 tbs ( or make your own - 1/2 tsp turmeric, 2 tsp coriander, 1 tsp chillie, 3/4 tsp garam masala powders)
Pepper Powder - 1 1/2 tbs
Salt as needed
Curry leaves - 6 strands
Shallots/pearl onions- 6-7 cut into rings
Green Chillies - 5-6
Coconut oil/ Canola oil to fry

Method:

Rub the masala, pepper and salt mix on the pieces. Each piece may be slashed diagonally (3 or 4 times) with a sharp knife before u apply the rub. Rest the chicken for 15 mts before frying in a wok with coconut oil or a mix of coconut and canola oil. Heat the oil , add the curry leaves, shallots and green chillies and fry them till crisp, remove it from the oil and set it aside, now fry the chicken pieces in enough oil so that 3/4 of the piece is immersed. Place a lid and fry so that the chicken is cooked through, turn and fry of 3-5 mts on each side.

Drain the fried pieces on a paper towel and serve with the curry leaves, green chillies and shallots for garnish. Goes down well and fast with rice or roti.Trust me!!
