Quick Ethaka Fry/Green Plantain Fry

Green plantains- 4 cups chopped into small pieces
Sambar powder -2 tbs
salt- to taste
oil- 2 tbs or as needed
Mustard seeds - 1 tsp
Curry leaves
Shallots- sliced

Method:

Heat oil in a wok and add mustard, curry leaves, onion and later the plantain. Add the sambar powder and salt and sufficient water to cook the plantain till done. Use a lid to speed up the process. Once the plantain is cooked add a little oil and fry the plantain over a low flame till brown, if needed add extra chilli powder or sambar powder. Serve with rice or roti as a side.

Spicy Doughnuts !!! Easy bonda/vada

Ingredients:
Maida/ Cake flour - 1 cup
Rice flour -  1/4 cup
Curd - 3 tbs
Cumin Seeds - 1 tsp
Ginger - 1 tsp finely chopped
Onion - 1/2 cup finely chopped
Curry leaves - 1 Tbs shredded
Peppercorns - 1 tsp
Asafoetida - 1/8 tsp
Coconut - 1/4 cup finely chopped (optional)
Green chillies - 1 Tbs finely chopped (optional)
baking soda - 1/2 tsp
Salt to taste
Water as needed
Oil for deep frying

Method:

Mix all the powders, spices, and dry ingredients. Add sufficient qty of water to get a thick batter of dropping consistency. Rest the batter for 30 mts and deep fry by dropping spoonfuls of batter into the hot oil. The batter may also be shaped like a doughnut, on a sheet of aluminium foil, after dabbing a little water on the foil.
Deep fry the donuts/bondas till golden and serve with hot tea on a rainy afternoon.
